Sweet potato and spinach lunch

Simple and fast lunch before heading off to a lecture! Now I am back at uni I rely on lunches that I can cook quickly, rather than scoffing down a packet of crisps and a pot noodle. Today I've made two small sweet potatoes, filled with hummus and spinach. Super healthy, quick and cheap!




Ingredients-
2 small sweet potatoes
Hummus

Spinach

To do-
1- Wash potatoes and microwave for 10 minutes.

2- Prepare plate, hummus and spinach.
3-When potatoes are ready, slice in half and fill with delicious hummus.
4- Serve on a bed of spinach and enjoy.

Fresh orange juice

As I am still a home for Christmas holidays I am unable to use my blender, so I did the next best thing and used a hand lemon juicer to make freshly squeezed orange juice! 
Of course I don't always squeeze oranges but I fancied something super fresh this morning. 

Ingredients: 
3+ Large orange 

To do: 
1- Cut the oranges in half 
2- Place half of an orange over the lemon/orange juicer, press hard and rotate untill juice is squeezed. 
3- Pour into glass and enjoy :)

- Of course you can use any brand we like to shop at aldi because it's super cheap :) 

I hope you liked this super simple little start to the day, it takes less than five minutes and it taste incredible.

Welcome

Welcome to the very start of my Vegan blog. 
I am a 21 year old studying Photography at Plymouth University and decided to turn Vegan in July 2014, I have never looked back since. (Accept for when I'm on holiday and always eat vegetarian.)
Throughout this journey I will share with you my simple and delicious Vegan breakfast's, Lunches, Dinners and Snacks, while living as a student and off a budget. As I am new to this I will begin by posting one breakfast, lunch, dinner and snack a week in order with photographs, ingredients and instructions. 
I hope some of you feel inspired to eat a little more healthy through out this blog, while on a budget
